Guest Connections

If you've been to Burntside and dined in the dining room you may have enjoyed the Tasting Menu which is an opportunity to try some fine unusual, limited production cheese, meats, olives, olive oils and honeys.

Each evening we introduce our new guests to these fun items and call their attention to the most unusual, most talked about item: the Tasmanian Leatherwood Honey. It has an incredible unique floral flavor. This week we were further educated about this honey by Mr. Peter Adams, a guest at Burntside, who lives in Tasmania and knows the brothers that produce this very honey.

We were fortunate to spend some good time in conversation and enjoyed his photographs of Tasmania, the rainforest and even the leatherwood trees. He educated us about the struggle between the people who value the leatherwood tree for the honey it produces (the only place in the world it grows is in Tasmania) and the bureaucrats who would prefer to remove these trees and plant faster growing cash crop trees. This personal connection from Tasmania makes us value it even more.

Mr Adams is a well known wood sculptor who has created "Windgrove", which is an environmental peace garden. We are fortunate to share Burntside with so many incredible guests.
